Do you have a particular area on which you want to focus? The reason this type of thing helps you get into better schools is because they like to see students who are creative and hard working. :) What do YOU think you want to do? Using different chemicals, you could make various polymers and test the relative strengths (tensile strength, elasticity, plasticity).
