Tasty Snack:

Peach Jam
Apple Jelly
Horseradish
Cream Cheese
Crackers (Ritz or Townhouse)

Mix 3 to 4 parts of peach jam with 3 to 4 parts of apple jelly. Mix in 1 part horseradish to start.
Spread cream cheese on crackers.

Dip crackers in the jam/jelly/horseradish dip. Adjust horseradish to taste. I like mine with quite a bit of bite to it so I end up using 2 to 3 parts horseradish. I have also substituted apricot preserves for the peach jam. It's an addictive flavor that will keep guests guessing what it is

Oooooooh! That sounds gooood! I do a slightly different variation that's less work: Try just plain jalapeno or red pepper jelly (not always easy to find, but worth the hunt).

And C1ay, that is one of my personal favorites! You have really great taste!!

And they have the best Rep Pepper Jelly at the local berry farm here, Buffy. Of course, it's probably not as good as something you might find at Knox, but not bad for the East coast!

Ok, my FAVORITE comfort food has got to be Warm Potato Salad. Cold or hot day, nothing beats it.

Warm Potato Salad

- Rough peel a 10 lb. bag of potatoes. By this I mean to get only about half the peel of each spud. The peel is actually the good part, and the kids won't gross out if some of it is gone.
- Cut the potatoes into pieces. I prefer mine to be bigger, about apricot size. But you can cut 'em any size you want.
- Dump the cut taters into a big pot. Cover them with water. Drain. Cover them with water again. Add two dashes of salt. Heat to boiling, then turn down to medium.
- Cook them until they are fairly soft, but not mushy. I like mine best a little less done than mashed potatoes, but not so raw that they're still crunchy.
- Drain off that water. DO NOT RINSE.
- Add a medium chooped onion, a jar of pickle relish, three squirts of Ranch dressing, and a bunch of mayo.
- Now add some mustard, your choice of flavor, but I like the dijon. Add some garlic salt, a shake or two will do.
- Stir well, with a BIG spoon. Get it all mixed up really good. You can even use a potato masher if you want, I do sometimes.

Sit down, and eat it with a spoon, right out of the pot. Seriously, get yourself a bowl before you put it on the table. I take this stuff to every potluck we do at church, and I have never taken a single bite of it home with me at the end of the night.

Eat it while it's warm. Comfort food doesn't get any better than this.

Potato salad is definitely one of my favorites too. I also put chopped bacon in mine.

Absolutely C1ay, got to have those fried bacon bits in the potato salad. When I make chili, I also like to add those bacon bits to the recipe. My home made chili recipe is out of this world and I guard it's secret with a passion. I'll need to hear a lot of begging before I turn loose of this recipe. In any case, the next time you make your own brand of chili, try adding those bacon bits, the taste will knock your socks off.

Todays lunch:
cut four thick slices of bread from a bagette
peel a near rotten avocado
place 1/2 of avocado on 2 pieces of bread
shake on some salt & pepper
cover with remaining bread

consume.
